Ginger was one of the first Asian spices carried to the Western world by camel caravans. The herb arrived from southern China in England during the Middle Ages by way of explorers and trade. One pound was considered equal in value to that of one sheep, making it affordable only to upper class English society. Spanish explorers brought ginger to the New World.
Today, it is cultivated all over tropic and subtropical Asia (50% of the world's harvest is produced in India), in Brazil, Jamaica and Nigeria.
The ginger stalk and scape grow to a height of three to four feet (90 to 120 cm). White with purple streaks or yellowish in color, the flowers grow on spikes at the end of the scapes that grow from the rhizome. Ginger is noted as having antioxidant effects. Ginger is also used to prevent or diminish nausea.
